Macaroni and Cheese....

Linda What is it with weather and food? Maybe it's just that food provides us with such comfort and we develop pleasant memories around those moments. There's nothing like the smell of chilli simmering on the stove on a cold winter day or the aroma of apple crisp baking on a cool fall afternoon. Well I woke up to the sound of pouring rain, thunder and flashes of lightning this morning and the first thing that I could think of was my.... grandmother's macaroni and cheese! It is soooooo good! She would always have it ready for us when we went to visit and I can promise you there wouldn't be any leftovers when the meal was finished!!! Just recently my oldest brother Mark said he was craving Grandma G's mac'n cheese and i said, "Then why don't you make some?" Well he didn't have the recipe and neither did my mom. Fortunately I had called my grandmother before she passed away and asked her for several of her special recipes so let me share this one with you. I promise it's a WINNER!!!
1 lb elbow macaroni- cooked and drained, 1 3/4 c milk, 1 stick of butter, 1 heaping tablespoon of flour, salt and pepper to taste, 3 c shredded sharp cheddar cheese, 2 cups monteray jack cheese, 1 packaged roll of Ritz crackers crushed up and 1 stick of butter.
Melt one stick of butter in a sauce pan and then add the milk to the butter. Wisk in the heaping tablespoon of flour and heat until slightly thickened. Remove from heat and stir in the cheeses and the salt and pepper. Pour the cheese mixture over the macaroni and mix well. Pour into a casserole dish. Melt one stick of butter in the microwave (about 30 seconds). Once melted, stir in the crushed up Ritz crackers. Once the crackers are coated with butter spread them over the top of the macaroni and cheese and bake at 350 for about 30 minutes! ENJOY!!!!
I don't know about you, but I'm ready to eat!

OH my gosh! I can't believe that you posted it!!! The secret is out. :) I have to admit that is the BEST mac you'll ever have (trust me I've had it many times).
